For Days When You're Feeling Like Waffles

I usually have and anti-uni-tasker philosophy when it comes to kitchen appliances, but with a recent score on a blissful yogurt maker and now a waffle iron, the philosophy has wavered.  I blame waffles. Homemade waffles just can't be beat and here's my favorite recipe for tender, crisp, and oh, so satisfying squares of goodness.   Say 'no' to Eggo and make y'er own (that being said, I usually freeze leftovers and they toast up beautifully.)

Me Favorite Waffles
adapted from Serious Eats
1 3/4 C a.p flour
1 t. baking powder
1/4 t. salt
2 egg yolks
1 3/4 C. milk
1/2 C. canola oil
2 egg whites
splash of vanilla extract

In a bowl combine flour, baking powder, and salt.  In another bowl beat egg yolks slightly, add milk and oil.  Pour this mixture into the flour until just combined, leave it lumpy.  In a separate bowl whip egg whites to stiff peak and gently fold into the bowl of batter.  Cook up in waffle iron until golden.  Top with maple syrup or jam.  Makes 4 servings.
